I certainly enjoy the benefits of mushrooms, and have now perfected a couple of dishes the kids love; they are a great food for the whole family.
There are so many mushroom recipes, you can include them in fried rice, creamy pasta dishes (my favourite), soups or pizza.
They are fat free, low in calories, have low levels of sugar and salt, provide a good source of dietary fibre and contain antioxidants, which are needed to help fight free radicals.
Types Of Mushrooms
Table mushroom (Agaricus bisporus) – also known as button mushrooms, portobello or white mushroom.
This is one of the most common type of mushroom, it is harvested and distributed all over the world and can be bought fresh, canned or dried. It has been discovered this mushroom contains three carcinogens (capable of causing cancer) two of which are broken down when cooked.
Porcini (boletus edulis) – also known as the penny bun or cep, is found in Europe and parts of North America. They are popular to use in soups and can be bought dried.
Field (Agaricus campestris) - is larger and tastier then the others, it has a short shelf life and is often found in fields where horses, sheep and cattle graze. It is a very common edible mushroom in Britain.
Shiitake (lentinula edodes) – known as the fragrant mushroom, black or , black forest mushroom, this one is my favourite, it contains many medicinal properties. Originally grown in China and used in Chinese cuisine, it is now cultivated and sold in many parts of the world.
Giant Puffball (calvatia gigantea) – this one is either round or pear shaped and grows during the summer and fall. It gets its name from the fact it can grow quite large and can be found in many fields and woods around the world.
Morchella (morel) – is a popular edible mushroom and a favourite of many gourmet cooks, they look a little like a honeycomb and are enjoyed for their taste.
Other types of mushrooms are, Shaggy Mane (Coprinus comatus), Oyster mushroom (Pleurotus ostreatus), Bearded Tooth (Hericium erinaceus).
Asian ones are the best to eat as they contain medicinal properties these are the; Oyster, Shiitake and the Enoki.
Mushrooms need to be cooked well to help remove toxins and don’t soak them in water, clean gently with a damp cloth as too much water can make them too spongy.
They are also one of the top 10 fat burning foods and are now being added to skin care products.
The health benefits of mushrooms will help increase your metabolism, enhance your immune system, help prevent heart and breast cancer, have anti inflammatory effects and contain vitamins; B1 (Thiamine), B2 (Riboflavin), B3 (Niacin), B5 (Pantothenic Acid), B9 (Folate), Vitamin H (biotin), Vitamin D, Sodium, Potassium, Selenium, Zinc, Calcium, Iron and Magnesium.
